The Underwood’s Blueberry Muffins

I’m back!! I know I’ve been slacking.  I was finishing up grad school and with finals, my practicum, and a new part time job life has been crazy.  But, no worries I won’t let it happen again.

Now that school is over, I tend to cook and bake A LOT more.  I like to have little treats in the house to munch on and we have a terrible sweet tooth.  I’m also a teacher so anything that is simple and easy to pack for lunch or snack throughout my workday is a must.

This week to kill two birds with one stone (breakfast for the morning, and a sweet tooth fix), I mixed up a batch of blueberry muffins. This can be deadly in our house.  For some reason, my husband will eat 2-3 per day.  Which puts me mixing up more before the week is over with. They never last long in our house.

Ingredients

  • 2/3 cup white sugar
  • 1 egg
  • 1/2 cup of vegetable oil
  • 1/3 cup of milk
  • 2 teaspoons of vanilla
  • 1 1/4 cups of all purpose flour
  • 2 teaspoons of cinnamon
  • 1  teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1/2 cup of sour cream
  • 1 1/2 cups of blueberries

Let’s Get Busy

 

  1. Preheat your oven to 375.  I’ve noticed lately when baking at 350.  The middle tends to under bake compared to baking on 375.
  2. I spray my pan lightly with Bakers Joy.  You can find it in the baking isle next to the other non stick sprays.
  3. In a mixing bowl combine  your sugar, oil, cinnamon, egg, milk and vanilla.  Mix until full combined.
  4. Next, add the flour, baking powder and salt.  I place it all on the wet ingredients to eliminate the extra dish.
  5. Now, mix until the wet and dry combines! BE CAREFUL not to over mix.  You may have some lumps it’s ok.  I tell myself about a good 10-12 “swirls”
  6. Now add your sour cream.  (additional 5-8 swirls)
  7. Finally, add your blueberries.  Be sure to wash and dry them.  When adding them to your batter no need to mix just fold the batter over the blueberries.  It’s completely ok to have some not covered in batter.

Time To Fill

  1. I use an ice cream scooper and a regular cupcake pan.
  2. Fill your sections to the top to get that good muffin shape
  3. Bake on 375 for 20-25 minutes
  4. Make sure the center of your muffins are cooked through by checking with a toothpick
  5. Finally, ENJOY!!!

Five Companies Who Provide Better Customer Service on Twitter Than By Phone

Ahhh Twitter has been known to be the platform for celebrity interactions, company advertisement, and a outlet for consumers to vent their frustrations.  I’ve been off Twitter for a while, and recently reconnected with it when we launched our blog.  It’s been interesting to say the least seeing the responses paired with the quality of service major companies provide via Twitter.

Verizon-Fios

One day, I started venting about how  Verizon Fios channel packages are and how much I hate that they do not provide a basic line up.  Personally, the way they structure their packages is nothing spectacular either.  I had to sacrifice my Lifetime, Oxygen, and Entertainment channels so my husband can receive his sports channels. So what happened when I vented my frustrations via Twitter….

The initial interaction with Verizon sparked my curiosity.  So any issue that came up over the last few weeks I turned to Twitter to get answers and the results….WOW! I received some of the best customer service ever.    The reply time was quick, the problem solved within minutes and some of the most friendliest people ever!

Snapchat

My Snapchat was down one morning and it went down in the middle of a good Snapchat story series.  If that has ever happened to you, then you know how horrific that can be.  So, what happens when you contact Snapchat via Twitter? They troubleshoot for you in less than 5 minutes.

 

Turbo Tax

As the saga continues, I tried out the trend with Turbo Tax.  I waited until the first of April to file our taxes (I know I’m a procrastinator)  and calling for issues had me sitting on hold for 45 minutes.  When I tweeted about it guess what?  The issue was resolved in 10 minutes. FullSizeRender (60)

Papa John’s 

Just this weekend the Papa Johns close to our apartment were displaying what not to do to a customer.  This is by far the worst experience I have ever had from any type of restaurant.  They locked the door early, ignored us knocking, we called and they pick up and immediately put us on hold as we were standing outside looking at them (right, that face you are making was my face for the rest of the night). Guess who tweeted about it? Yep, me and I received a response via Twitter the next morning and a phone call from the area manager.

I have to give credit where credit is due, the phone called I received from the Area Manager was one of the most genuine apology you will ever receive from a manager.  He reviewed the cameras and confirmed everything I had noted.  He sounded so disappointed for their actions and genuinely wanted me to give them another shot. He called on a Sunday afternoon when most people would wait until Monday mid-day in hopes of catching the voicemail.  I was blown away. So yeah, Papa Johns will get my pennies once again.  FullSizeRender (58)

Crate & Barrel

Last but not least, Crate and Barrel.  I love this overpriced company but geez, if you have ever ordered anything from them, then you know their back orders take FOREVER. By, the time they are filled you have falling in love with a completely different style or item.  Personally, I think they need to eliminate the whole back orders shenanigans.  The table mats I ordered in February had not arrived by the end April.  I was on hold for about 20 minutes and was growing impatient.  Like always, I took to Twitter, provided them my order number and they squared me away and sent me a confirmation email.  No phone, no waiting, just request and it was done.FullSizeRender (59)

Chicken Pineapple Bowls

Good Morning Readers 🙂 I hope all is well with you lovely folks. I have been slacking on my macking with my part of the blog and I sincerely apologize 😦 . No excuses right!!!!

Okay lets get right to it…..

Recently on my Facebook feed, I stumbled across an old high school friend’s recipe that she uses for her business.  She makes lunch and dinner plates for delivery in the Bay Area ( Oakland & San Francisco ) area as well as catering for private parties. One plate that stood out to me the most is her “Pineapple Chicken Bowl”.  I thought the presentation of the bowl was phenomenal and wanted to try it myself.

How intriguing does this plate look? Looks pretty 5-star to me, and I was up for the challenge. I started out trying to figure out what kind of plate I wanted for myself and then customize it. I hopped on Pinterest for a few “Mandarin/Orange/Sweet&Sour” chicken, and went with the easiest one to create. Of course, I’m a huge fan of sauteed onions, zucchini, squash and garlic, so I had to include those. They are my go-to veggies to sauteed with a meal and my true “ride or die” to tastes delicious with all my meals.  I finished it off with a simple white rice but I’m sure if you have the time, you can fry it as well.

The Star of this recipe is the “Cut Pineapple Bowl”. The presentation of the meal is immaculate and a huge crowd pleaser. I will not reveal all of the 5 different recipes I created into my own (that’s for another blog one day), but I will at least tell you how I got there, so you can be creative on your own.

Let’s Get Started

First thing: I used one whole pineapple. Split it in half ( which is easy but please be careful, I used the biggest knife I had and I was a little intimidated, so I went slow)  Once cut in half, I scooped out the filling and saved the chunks of pineapple for my fruit smoothies.  Scooping out was entirely harder than I thought, and the pictures on pinterest made it look like CAKE ( SIKE!!!!!)  I cut around the body but on the inside, to make it easier and used a spoon to get out the chunks. You can slice part of it to make the chunks smaller and a “smarter” transition, but it took me forever to figure that brilliant idea out. *See Picture below* Once you’ve scooped most of the core out, there will be juice inside of it floating at the bottom.  I chose to leave some juice inside just for flavor for the chicken and rice. **((Boo-Thang, said it helped with the chicken but couldn’t taste it for the rice…my sweetie always has an opinion, gotta love him))**

I put that aside and started on the rice, since that takes the longest.  Used the basic white rice, threw them in a pot, boiled in water and let it simmer until the water was absorbed.  I proceeded to cut my veggies, onions, garlic and such and started sauteeing them. Once they were cooked to my liking, I added the chicken thighs.Sliced and Diced into bite size pieces, seasoned the hell out of them, and cooked them thoroughly until brown.

Mixed the veggies in with the chicken and …… here is where i CHEATED (yes cheated, don’t judge me).  I found “Panda Express” sauces at Kroger and couldn’t resist the urge of using that instead of homemade teriyaki sauce (not this tired girl )! Smothered the meat and vegetables and let it simmer a bit.

Once the rice was complete, I orchestrated how I wanted the bowl to look, and WOW! It was just to pretty to eat, but I DEF ate it !!!!

A Thank You To Our Supporters

 

WOW, is all we can say.  We first launched our blog on Valentines day (2-14-16) and never imagined so many people would be interested in our “Simple Life.” We discussed for years about starting a blog.  When Jade left for law enforcement training it gave me ideal time to start planning (serious bestie withdrawals).  We also have goals each year that we discuss and launching the blog was the deal for 2016!

We have been nominated for the Liebster Award twice from MyCrazyAshLife and Jay Colby (head over and check out their amazing blogs), we have surpassed our initial goal of 100 followers and doubled it. As of today we have 213  amazingly supportive readers.  Remember to subscribe so you don’t miss a beat 🙂

Top Ten Things About Jade:

1) A True California girl

*San Diego by way of Point Loma ( Go Pointers ) and Bay Area for my high school years! California is my home and like anyone, we all have a special spot in our hearts for our home, mine just happens to be the great Sunshine State.  California is my safe haven and maybe one day I can call it home again.

2) Pinterest Fanatic if you couldn’t guess it by now!

* I don’t know who invented this creation but shame on them for making it as addicting as ever.  There’s not one day I go without looking through the Pinterest App on my phone.  It’s exciting just to see the new pins every page I go on. I do however only go on ( Foods, Travel, Weddings, DIY, and home decor) everything….”gets NO LOVE”, but the search engine is the million dollar trade. I can look up sickness symptoms, housewarming gifts for co-workers, and the list just goes on and on. Whoever you are out there, BLESS YOU!

3) Secret Crushes on Michael B. Jordan & Trey Burke

*Lets just say…”Have you seen these two gentlemen”? Let me just remind you of them…lol I think ultimately I have a crush on Michael B. Jordan because he looks like my hunny boo. Why else right? And Trey? ha, he got lucky to be on my list …. ( just don’t tell him)

4) Obsessed with Cooking Shows/New Recipes

*From Pioneer Woman to the new Tia Mowry on the cooking show, I love them all. I have taken so many recipes from each show on the channel and just used it for references. I don’t make their main courses too much but they definitely inspire other dishes I like. Something about cooking just makes the world a happy place; and for me its fulfilling!

5) Absolutely hates working out

*I haven’t been hit by the workout bug, and I don’t foresee it anytime soon. I wish there was a magic spell to cast upon me and I will wake up and run 3 miles a day with ease. But the reality of it is, I hate it!!! I played college volleyball all 4 years and you would think it came natural to me? Ha, try again. NOPE!

6) New found love for gardening & plants (but hate bugs )

*Buying this house with my BF has opened my eyes to new adventures, one being Gardening! I haven’t started it yet ( HAHA ) but I have been researching on it a lot lately. Rikki, did her own strawberry garden and I’ve been wanting to do it for the longest now.  I don’t eat much strawberries but I would love to get started on other veggies soon.  I don’t like bees or bugs but I guess that something I’ll have to get over! Any advice or blogs please leave them in the comments!!!!!!!!!!!!!!!!

7) Bargain shopper, I never pay full price for ANYTHING

*Thank my beautiful mother who passed this obsession on to me. When I say we pay for NOTHING full price, we don’t but I mean with the basics of life, not things that can’t be “discounted”.  [ I promise to make a blog about this very subject ] . Shopping Apps, coupons, discount stores like TJ MAXX, and email promotions are my addictions to saving a few dollars here and there.

8) My first concert: Britney Spears

*Yup! In the 6th grade; 2 friends and her mother carried us to the “Oops! I did it again” concert and it was a blast!  I was the epitome of 90’s Pop Culture and it only got worse after that! From Usher, to B2K all in high school….I thought I was the Shhhhhhhhhh! I miss going to concerts, If I could choose to go to any concert being that I’m 26 now, I would choose a Trey Songz or an old school mix, how amazing would that be? Rikki and I need to go to a Taylor Swift or Carrie Underwood….its on our Best Friends Bucket List!

9) Adores all animals, some more than others!

*My new favorite pet I would love to have but I know Mr. Man would have a heart attack over is; A piglet !! Those little boogers are the cutest things were their small, but they grow fast and living in the suburbs with HOA’s, I don’t think that will fly, but I guess being in the country this long, you love animals.

10) I have the best boyfriend ever….soon to be Mrs. Summerville

* You know I couldn’t go one whole post with out mentioning my boo thang. And its True, we really bring out the best in each other, I’m lucky to have him ( as well as he is lucky to have me ) but I’m blessed to have a beautiful relationship with this man, drama-free, and trying to make the most out of this world God created for us. We are always wanting the next best thing in life, education and career and won’t settle for less!

  • I love technology!
    • Apple products are necessities in life. Anything dealing with technology, I love to read and research about.  I’m also a trial and error type of learner, so technology provides you with the ability to explore with minimal damage.  I work in the instructional design field so I love to be ahead of the game when it comes to new emerging tech tools that are coming out.
  • Youtube is amazinggggg!
  • 90% of the time I “Shop Small”
    • I come from a business oriented family.  I love to shop small and support the “little man.” My favorite site to find some awesome shops is Etsy!  If you have never been on this site you are losing in life.  From home decor, fashion, gifts, and little knick knacks. Below are some of my favorite shops.    Soon we are going to start featuring them with a “Small Business Saturday” section!
  • Cooking is Therapeutic
    • As you see, Jade and I love to cook.  I think I converted her to an at home chef when we were roommates in college.  I love to watch Chopped, Cupcake Wars, and Hell’s Kitchen.  They always think out the box and I love it.  Growing up my Ma ALWAYS cooked.  My first frozen dinner experience happened in college so she set the bar pretty high for my future family.
  • Adulting sucks
    • I just want to be a kid again.  Bills, responsibility, adulting SUCKS! I know it’s a part of life but geez.   Life is hard, and finding a balance between enjoying my twenties and planning for retirement is baffling.

Baked Stuffed Manicotti

Once again we are back in the kitchen!

We are huge Italian fans.  We are in the processes of saving our coins to go to Italy next year (future blog on how we did it coming one day ).  Italian has so many simple, but flavorful dishes.  The meals are beyond filling, and you can guarantee leftovers. One of my husbands favorite thing to order at an Italian restaurant is any manicotti or cannelloni stuffed dishes.  That was my inspiration to start trying to make a few at home.

Making this dish was a complete leap of faith.  I knew our taste preference and with some liquor courage I was excited to see what I could come up with.  Below is the cheesy yummies, that had my husband giving sweet kisses when he cleaned his plate.

Ingredients 

  • 1 box of Manicotti rolls
  • 1 pack Mozzarella (2 cups)
  • 1 pack Parmesan (2 cups)
  • 1 half container of ricotta (about 4 oz.)
  • 1 pound ground beef
  • 2 eggs
  • 2 tablespoons of pesto
  • 1 can of marinara

 

Let’s Get Busy

  • Boil your manicotti rolls
  • Cook your ground beef (Italian sausage works well also)
  • While your manicotti rolls are boiling, mixed your cooked ground beef, 1 cup of mozzarella, 1 cup of Parmesan cheese, two eggs, 2 tablespoons of marinara and ricotta cheese
  • Once your manicotti rolls are done boiling, run them under cold water and let cool.
  • Once cool, stuff your rolls with your ground beef mixture
  • In a long 13×9 pan cover the bottom with Marinara  sauce
  • Then place your rolls with small space in between
  • Cover your rolls with marinara and top with the rest of your cheese
  • Bake covered for 30 mins and then uncover and back for an additional 15

 

This is a perfect dishes for potlucks in the office or pre-prep dinner that the sitter can just pop in the oven.  I do not even want to think about the calorie count for this dish, but live on the wild side and run later 🙂

Cinnamon Walnut Sugar Cookies

And we are back in the kitchen…..

I’m on spring break (one of the few perks of being a teacher) this week and our family just left after an awesome visit.  As we were chit chatting I felt like baking but, I did not feel like running out to get ingredients. After searching through the pantry, I had all the ingredients for sugar cookies but wanted to jazz them up a little.  That’s where the cinnamon and the walnuts came in.  If you haven’t noticed yet, I love anything with cinnamon.

My husband loves to eat and he is my personal food critic. So, when I told him what I was going to attempt to make he was all for it! I envy him because he doesn’t gain a pound but me on the other hand…….

As always, I had some music going, a full glass of wine, and creativity flowing.  Below you will find the key to all the yummies we are enjoying today. Nothing about this cookie is healthy, but everyone needs some type of guilty pleasure to enjoy after a salad 🙂

Ingredients 

Serving Size–12 medium size cookies

3/4 cups of butter softened

1 cup of granulated sugar

2 eggs

3 teaspoons of vanilla (I like to add a little extra)

1 tablespoon of cinnamon

1 cup of walnuts (we prefer extra nuts)

1/2 tablespoon of brown sugar

1/2 teaspoons of salt

2 1/4 teaspoons of baking powder

2 1/2 cups of all purpose flour

Frosting Ingredients:

2 3/4 cups of powdered sugar

1 stick of softened butter

3/4 tablespoon of vanilla extract

1/2 tablespoon of ground cinnamon

A splash of milk

 

Let’s Get Busy

  • In a mixing bowl, cream together your butter and sugar
  • Now,mix in your eggs one at a time
  • Next, add your vanilla and cinnamon
  • In the same bowl add the baking powder, flour, and salt (mix long enough to remove all or most of the lumps
  • Add walnuts and fold over until all your walnuts are covered
  • Cover and let it your dough chill for 2 hours
  • Preheat oven to 350 degrees
  • Line your baking sheet
  • Roll cookies into balls (small to medium balls)
  • Bake for 8-12 minutes (I like to bake mine for 9 mins turn the oven off and let them sit in there for an additional 2 mins)
  • They should be a nice golden brown on the bottom

  • While your cookies are cooling you are going to prepare your frosting.
  • In a medium mixing bowl, add powdered sugar and butter until it’s creamy.
  • Now add it’s time for the vanilla and cinnamon
  • Add your milk one small splash at a time until you reached your desired consistency (we do not like a thick icing for our cookies)
  • Once the cookies have completely cooled, apply your icing
  • Last but not least, ENJOY!!!!

Date Night

Mountains Trip

Well, the say there is a first time for everything right? I am a born and raised true California girl and I  take pride in it. I was fortunate to come from a family who believes in spending money on the amazing world God has created. My dear mother is a retired Navy Reservist and she raised me to believe that “the sky is the limit”.

Growing up, our frequent trips to Disneyland, Six Flags, the Wild Animal Park ( San Diego Zoo ), had my 11th birthday in the “Circus Circus” hotel, and many places and states I traveled for Club Volleyball, the list is endless and I appreciate her inspiring and
showing me a world of adventure. My boyfriend and I have made it a point to include that goal or as they say it “#Relationshipgoal.” It’s the hobby that keeps our spark alive.

The beginning of the year, we decided to go to the mountains as a first for both of us. We typically decide on places in a big city or a resort to travel and get our “passport stamps”, but we decided to take a leap of faith and travel to the mountains.  Both of us are truly “suburban raised”, and no absolutely nothing about camping, hunting, fishing, and well you get the picture.

We did what we do best and “Google” our way through planning. Tripadvisor, Groupon, looked up the cabins in its entirety (believe me, long nights going through all the cabin pictures can get annoying), researched activity and weather history and restaurants
near by.  We started out with the two of us, and ended being six good friends last minute.

Cabin Details

The website we booked for the cabin was CarolinaVacationCabins.com and they were a pleasure to work with.  They sent out information regarding the Cabin, places to eat, and activities they offered in the winter time.  Being that it was COLD, and we hate the COLD (that’s why we live at the beach), we knew we were just going to be in the house. We book a month in advance and upon arrival, it was as easy as ONE-TWO-THREE.

Once the weekend came, we all traveled together to what it was called, Bryson City, NC. We picked up our keys and received directions to the house.  Well, let me tell you about the journey to get to the house.  It was dark, steep hills, and serious curve dirt road that I never thought existed. I guess I naively thought it would be a straight road up the hill to the house, HA….boy, were we in for a rude awakening.  Luckily, we did have one mountain girl who grew up in a town close by and was used to the narrow cliff roads, that if you sneezed you would fall off the road.

After holding our breath to get to the house, the breathtaking views of our house and our surroundings took the cake! The pictures did it NO JUSTICE! From the bedrooms, to the major kitchen, HOT TUB ( yes hot tub outside ) and outdoor deck with flat screen tv, we were in heaven! We also had a card table, wet bar, and 3 bedrooms. We dropped our bags and began our journey back down to town for  food and drinks for the weekend.

Weekend Must Haves 

The closest town was “Cherokee, NC”, and it happened to be on a reservation (how could you guess? The name definitely gave it away right!?!). We we went to the local Food Lion and picked up breakfast food, everyone had their own favorite snacks and dinner for Saturday night, STEAKS!!! After walking Food Lion 3 times we finally came to the conclusion there wasn’t an aisle for BEER! We were mortified, probably the worst sight to see. According to the store clerk, they don’t serve alcohol on the reservation! Can you say panic mode? HAHA, so we had to drive a little out of town for the closet gas station/ ABC store.  I must say, it was pretty cool knowing we were on the reservation and the powerful history to say the least, we can check that off the bucket list!

After all the commotion is over with, we have finally arrived, settled in, and began to PARTAYYY!!!! We relaxed, laughed, played, and just treasure the moment. It was just what we needed.

The bedrooms were beautiful; it was FREEZING like hell, but relaxing and comfortable. Something new and different.  Each night, we did something different. Shots of course, drinking games, card games, football games were on as well.  Each couple cooked a meal, we did breakfast (I mean who can go wrong with that easy meal), one couple grilled steaks and another couple made Queso for a mid-day snack.  During the days, we hung out with each other, one couple went down to the river and explored the area a bit, my boyfriend and I are sports fans, so we watch the games and napped downstairs while the other couples hung out on the balcony and played pool.

I really and truly enjoyed myself and the company with us! Everyone got along being that it was the first time some met each other and it was all positive vibes. This city girl loveeeeeeeddddd the mountains and can’t wait to go back soon!

Spinach Meatball Pizza

The joys of struggling to decide on dinner ever Friday night haunts me!  Clearly no one wants to cook a five star meal, and picking a restaurant is too demanding after a long week of work.  So for convenience we do homemade pizza night about once a month (twice if we’ve been hit by the pizza fever).

I hit the jackpot with my husband.  He can cook, although he allows me to do most of the cooking, certain meals are deemed “his”. This week instead of exploring a local Happy Hour, we opted for a relaxing pajama required dinner.

Prince Charming got to cooking while I was able to kick back with a glass of wine and unwind with the 2000’s R&B Pandora station playing.  As he calls it, the Spinach Meatball masterpiece was our poison for the night. It came out beyond amazing, and it was our first time using this particular combination of ingredients.

Ingredients 

Serving Size–2 pizzas

1/2 bag of spinach

1 can of Barilla Roasted Garlic Sauce or Tomato & Basil

6 Turkey Meatballs

2 Pillsbury Thin Crust pizza crust

1/3 cup of flour

2 tablespoons of pesto (per pizza)–there no such thing as too much pesto

1/4 Cup of Smoked Gouda

1/2 of Pizza Blend Cheese (combination pack at your local grocery store or Italian will do)

Let’s Get Busy

  • First preheat your oven to 425
  • Chop your spinach
  • Next, flour your stone pizza pan lightly (we sprinkle just enough to cover the main spots so it wont stick! See the picture below)
  • Next, open  your dough and roll it out to your desired preference
  • Now, spoon out your desired amount of sauce (we put it in a bowl and add pesto, salt, pepper, red pepper flakes and olive oil to it)
  • Cover the rolled out dough with the sauce
  • Add your toppings (cheese, spinach, meat, more cheese)
  • Now, to the oven it goes (cook time 8-12 minutes, we like it a nice golden brown which is a 10 minute cook time)
  • Last but not least, ENJOY!!!!!

Myrtle Beach Happy Hour Find

Happy Tuesday Readers !!!

Another week has come and gone, I swear the older I get the faster the days go by. Why can’t time just stop moving soooooooooooo fast. If you haven’t guessed, I’ve chosen the career choice of being in law enforcement and I absolutely love it!!! There is a lot of bad press recently regarding police officers but there are tremendous amount of positives that does not get the “social media” reward of validation and that’s okay. Trust me, not one police officer I know does it for “praise and thank you’s”. That being said, I am extremely busy during the week. We have slow moments but generally it’s a non stop and unpredictable day. But I promise to do better with my posts!!!!!

Now on to Happy Hour goodies. Who does not love a good happy hour?? I mean a really GOOOD happy hour. The bells and whistles with the whole cha-bang!

On Saturdays, if my sweetie and I are both home together, our ritual is happy hour. Cheap drinks and even cheaper food, it’s a chance for me to put on make up and get cute (let’s be honest, how cute would you want to be with boots, bullet proof vest and hair pinned up? yuck lol!) So I yearn for the chance to let my hair down for him. We moved to the Myrtle Beach area a few years ago and it seems that we’ve exhausted almost all restaurants options.

One of our favorite Happy Hour option is “Burro Loco”.Their Happy Hour is everyday from 4pm-7pm and  they have the cheapest prices in town.  During the week, is the best time to go. They have music blasting, karaoke and the crowd they attract makes for a fun atmosphere. It’s perfect for all ages, singles, couples, and families. Surprisingly, Saturday is the slowest day  (and we like to take that advantage lol.)

Vanilla Cinnamon Pancakes

And we are back in the kitchen….mixing up Sunday morning pancakes.  Growing up, on the weekends my Dad would cook pancakes for the family.  As we completed our chorus, he could mix up such a simple, buttery pancake that would put us all to sleep afterwards.

Now that I’m older, I find myself reverting back to childhood traditions. Some traditions I keep the same, and some I find myself adding a little tweak here and there.  I have a love for anything that requires extra vanilla or cinnamon.  So, why not add it to pancakes?

Below is my version of a vanilla cinnamon pancake.  This recipe makes about 8-10 pancakes.  It also works well if you add a cup of pecans or blueberries.

Perfect for National Pancake Day coming on March 8, 2016!!!

Ingredients

  • 2 1/2 cups of flour
  • 1/4 cup of sugar
  • 1 1/12 tsp baking powder
  • 1/4 tsp salt
  • 1 3/4 cups of milk
  • 2 tsp of vanilla extract
  • 1 tsp of ground cinnamon
  • 1 egg
  • 1/2 cup of slightly melted butter

Let’s Get Busy….

  1. Combine dry ingredients first (flour, sugar, baking powder, baking soda, and salt)
  2. Whisk ingredients well
  3. Combine wet ingredients (milk, vanilla, cinnamon, slightly melted, and egg)
  4. Now, combine your wet ingredients with your dry (I normally do it in 3rds)
  5. Whisk until the ingredients are combined evenly
  6. Be careful not to over beat the ingredients, your pancakes will not be fluffy if this happens! Trust me, I’ve done it a few times.  It’s ok to have lumps 🙂 
  7. I normally use an electric skillet (275 degrees) , because it cooks more than one pancake at a time.
  8. Butter the skillet lightly
  9. I use a half of ladle per pancake
  10. Allow 3-4 mins of cook time per side
